Serves 8-10


2 sets of:
•    Chocolate Pancake Mix 500g
•    2 Eggs (required ingredients for pancake mix)
•    Oil 1/4 Cup (required ingredients for pancake mix)
•    Water 1 1/4 Cup (required ingredients for pancake mix)
•    Vanilla Ice Cream 1.5L

1.    Combine all wet ingredients first. eggs, oil, and water using a whisk.
2.    Once well combined, gradually add your chocolate pancake mix with a whisk.
3.    Pour into a 14 x 10" baking tray lined with parchment paper half an inch thick.
4.    Bake for 8-10 mins at 375 deg. repeat process to have 2 sets of cake.
5.    After Baking, Trim the edges and round the corners of the cake. freeze it for 30 mins.
6.    Invert the cake onto a clean baking sheet; lined with cling wrap, peel off the parchment. Open 1 ice cream carton then slide the ice cream onto the cake.
7.    Repeat with the other carton of ice cream, arranging them side by side on the cake. Cover with plastic wrap and press with your hands to smooth the ice cream and fill the gaps.
8.    Remove the other cake from the parchment with a thin spatula; place it on the ice cream. Trim any excess cake and smooth the sides. Freeze at least 2 hours before serving.
